Los últimos brotes de enfermedades transmitidas por alimentos han impulsado la búsqueda de formas innovadoras para inhibir el crecimiento microbiano en alimentos y una opción es el empleo de aditivos que proporcionen un mayor margen de seguridad y calidad, motivo por el cual el presente trabajo de investigación tuvo por finalidad extraer, caracterizar y evaluar el efecto antimicrobiano a diferentes concentraciones del aceite esencial de tomillo (Thymus vulgaris) en carne de pollo deshuesada almacenada en refrigeración. Los ensayos experimentales se realizaron en los laboratorios de la Facultad de Ingeniería Química e Industrias Alimentarias UNPRG. |
